Roasted Lamb Rack in Red Wine and Oyster Sauce

Lamb rack 900 g [with about 8 ribs]
Shallots 2 pcs [sliced]
Red wine 6 tbsp
Salad vegetables [for serving]

Sauce & Marinade

Premium Oyster Sauce 2 tbsp
Chopped rosemary 1 tbsp
Premium Oyster Sauce 4 tbsp
Water 10 tbsp
Sugar 2 tbsp
Corn starch 1 tbsp

  1. Marinate lamb rack for 2 hours.
  2. Roast lamb rack at 230C/450F hot oven for 10 minutes.  Then bake at 180C/350F for about 25 minutes or until desired doneness.  Slice rack into chops and put on serving plates with salad vegetables. 
  3. Saute shallots in 1 tbsp oil.  Add sauce mix and heat through.  Turn off heat. Stir in red wine and pour over lamb chops.
