Baked Barbecue Pork Patties in Oyster Sauce

Kid's Favorite

Roasted barbecue pork/Char Siu 90 g [diced]
Chinese mushroom(s) 2 pcs [soaked and diced]
Onion(s) 50 g [diced]
Yellow chives 50 g [diced]

Sauce & Marinade

Premium Oyster Sauce 2 tbsp
Water 3 tbsp
Corn starch 1/2 tsp
Sugar 1/2 tsp
Plain Flour 200 g
Lard 50 g
Butter 50 g
Sugar 50 g
Water 1/4 Cup

  1. Stir-fry onion, mushrooms, roasted barbecue pork and yellow chives in 2 tbsp oil.  Add sauce mix and cook until sauce thickens.  Set aside to cool and divide into 20 portions.
  2. Beat lard, margarine and sugar together until light and fluffy.
  3. Fold in sieved flour.  Add water to form a soft dough.  Knead until smooth.
  4. Form the dough into a long roll.  Divide into 20 equal portions and flatten to form rounds.
  5. Wrap each portion of filling with a piece of dough to form patties.  Glaze with beaten egg.
  6. Bake at 190C [375F] hot oven for 15 to 20 minutes until golden yellow and done.

    Remarks 1: Lard can be substituted by vegetable shortening.
    Remarks 2: The water amount is for reference. Adjust the amount according to the weather.
